 Pork and Prunes

This is a very simple recipe, for those of you who eat meat. It is easy to get hold of the ingredients - they are very commonly eaten foods. If you are teaching your children to cook, this one is good to start with, because it is so easy to make and doesn't require too many ingredients.

This dish is also very good for you! And it will make a pleasant change, adding some variety to your weight loss diet plan. Here is what you will need to cook pork and prunes:

Ingredients for  Pork and Prunes

  • Lean pork steaks (depending on how many you are cooking for – one or two per person)
  • About 12 dried prunes or a tin of prunes in fruit juice
  • A handful of green beans
  • 2 Carrots
  • 6 Mushrooms
  • 1 Onion
  • A couple of cloves of garlic
  • A little olive oil

Cooking Instructions for Pork and Prunes

  •  Soak the prunes until soft (or open the tin!)
  • Cut the pork into strips and fry in the olive oil until cooked
  • Chop the vegetables, add and fry for a few minutes
  • Add the prunes and prune juice and simmer for about 10 minutes, making sure the juice doesn't evaporate completely - add a little water if necessary.


Serve with rice and/or broccoli, cauliflower, mange tout, spinach, cabbage or whatever other vegetables you enjoy. If you have a reasonably large helping of pork and several vegetables, you can skip the rice and you won't really miss it. As with the other recipes, you can cook rice for the rest of the family or your guests, while you enjoy pork and prunes with a selction of vegetables.
